Apple pay payments from my bank (ASN Bank in the Netherlands) have a unique payee names for each payment I make there. Since the date/time is included in the payee field. This makes the rules that Lunch Money automatically creates kind of useless since they use this unique payee name.
For example, this is one payee for a transaction using Apple Pay on ASN Bank.

When I clean up the auto-created rule to filter Payee with Starts with "Marche t Amsterdammert", it does work as expected.
