Improve function of default "Cash" account

This encompasses:
- allow renaming the default "Cash" account to something else
- allow "Cash" account to track a balance
- better messaging around what this account is for

Given the "physical cash" account type available for creation, I too am confused about what the purpose of the default generic "Cash transactions" psuedoaccount is. A knowledge base article to explain why someone might choose that over creating a physical cash account would at least allow for an informed intentional decision. Or just get rid of it. I ended up creating a manually managed separate account called "cash."
